How often do you Roast?
We roast weekly. We typically roast on Saturdays. We also roast on Tuesdays when demand is high. And if it's really, really busy we will roast as needed. Either way it's always Just-In-Time! Also be sure to keep an eye out for our Roasting Alerts! You can sign up for our Feedburner subscription on the Side Bar of most pages on our website. 
We like surprises so we may sneak up on you with something really cool every now and again. And you can stay in close contact to find out which new beans we are playing with. When will my fresh roasted coffee ship (deliver)?
We want your coffee to be as fresh as possible when you receive it. So we typically rest, and bag your coffee on roast day. For most coffees we ship on Mondays and Thursdays. We generally ship using USPS with 2 day delivery to most places in the lower 48.  

If you are lucky enough to live nearby, then you have the option of having us deliver your coffee right to your mailbox or doorstep. It might just be the best $1 you have ever spent! Yep, we said LOCAL DELIVERY for a buck! Keeping it local, and old school just luck the Milk Man!

So whatever day we roast, or ship, or deliver - by the time you get around to grinding & brewing your beans - the coffee is Ready to Rock! Just choose the Wisecrack Local Delivery Option at checkout. Your Zip Code will dictate if you qualify or not. So be sure to enter your info correctly. If you see the option at checkout, then you're in!

How and where should I keep my coffee?
Always store your coffee in an airtight container somewhere cool, dry, and dark. We like valve bags - that's why we package in them. But at the Ranch we use these handy Vacuum Containers. And we also love Mason Jars too. I mean, who doesn't? And, contrary to popular belief, coffee should never be stored in the refrigerator or freezer. It will lose its flavor and taste dull - not what you paid for. Of course, it is best enjoyed within a few weeks of the Roasted On date on the package.

How should I brew my coffee?
Nooooo! Not that one. LOL! So many good methods to try. Check out these posts for more info. On a typical day, we prefer brewing with our Chemex. Clean, delicious, and about as origin authentic as it gets! But sometimes we are looking forward to thicker, chewier brew so we go French Press. If we are hitting the road it's a quick small pour over or mini-press. And once upon a time we swore we would always use our Cuisinart. We still do sometimes.

How quickly should I use up my beans?
While it's important to enjoy all of that deliciousness within a reasonable time frame - let's use 3 - 4 weeks from the roast date as a general rule of thumb - we also believe there are more important things in life to stress out about. Contrary to popular marketing, coffee does not last forever, so your super-mega-market coffee is probably way beyond its useful taste profile long before you buy it, unless it's that cardboard flavor you've been trying to cover up with milk and sugar that you truly desire. 

Have you ever seen a Roast Date on a grocery store bought coffee? It's a rare occurrence. So how are we going to know what fresh looks like? Look for beans that have a clearly printed (or handwritten) Roasted On date on them. Any coffee that can’t tell you this information probably doesn’t want you to know. 

Be very suspect of any packaging that uses the all-too-common Use By date on the bag most commonly found on grocery store coffee. The same goes for Best Before dates, especially those that have a date ending with a year we are not currently in. Again, just buy coffee with a Roast Date.

Also, your coffee does not expire just 2 weeks off the roast as some would want you to believe. At Wisecrack we prefer to use our coffees up within 2 - 3 weeks of roasting. You can rest assured we are constantly cupping, brewing, and testing all of our products at different stages of their lives. So we will let you know if there are any special needs for a particular coffee. 

To sum it all up, freshly roasted coffee is always better, so let's just say the sooner you use your coffee up, the better. And please be sure to use it all within a week or two once you open that bag. I thought I was buying coffee, not flowers. What is all this hullabaloo about Bloom?
Bloom is amazing. If you are a fan of Slow Mornings like we are, then you will appreciate the bloom. Here's a blog post and video about it. But long story short, if you have an extra 30 to 60 seconds, then you should always Bloom your coffee! The added bonus is you get to watch the Froth Volcano and take in all those amazing aromas being released. Sometimes if you are lucky, it's a Chocolate Froth Volcano!

Why are certain items you offer Organic, Fair Trade, Rain Forest, etc - yet others are not?
We source our coffees from our Importer based on a number of factors with cup quality, value, and roast-ability all at the top of that list. We are looking for coffees we like and that we think we can roast well, so that you will end up with coffee that makes you happy with your purchase. Sometimes that's an Organic coffee and sometimes it's not. Do a little research online and you will quickly find a wealth of information on why Organic, Fair Trade, etc. are not the be-all-end-all in coffee.

Since this is a FAQ, we will spare you the dissertation. It's complicated and some of the best, highest quality, bio-dynamically produced coffees in the world are not "Certified" Organic. Lots of hoops, red-tape, and bureaucracy are usually the culprits here. And the lion's share of small producers / farmers that cultivate some of the best coffee-to-cup quality simply do not have the resources to afford "jumping through those hoops". But you can rest easy knowing that we always source coffee of a quality that we can stand behind. And all that aside, we still try to keep at least one Organic Certified coffee in our line-up at all times.

Where does all this coffee come from? Does Wisecrack grow coffee? Do you own a farm?
We wish! But while coffee grows on trees, it does not grow where Wisecrack grows. We wrote about this on our Wise:Dumb page. Check it out. So we get our coffee fresh off those gigantic container ships you see near the Airport, via our amazing partner Coffee Importer. They are the best. And yes, it's our secret. But we can tell you this...  

Our Coffee Importer is so particular about their coffee that they have people all over the world tasting, testing, tasting, sampling, analyzing, and did I mention tasting, all of the coffee they import. They do this at every stage of the growing, importing, and sales process. And they only store the coffee they import in their own warehouse. Complete control. If they could grow it too - they would. Come to think of it, they are heavily involved with the farmers they buy from as well. So we receive it as fresh as possible, and we know it was treated well. Plus they keep us supplied with samples so we can keep you supplied with new ideas. Now no one gets bored!

Is my Credit Card safe and my Privacy protected?
We don't know, are they? Ha! Just kidding. The answer is OF COURSE. We use PayPal exclusively and for good reason. And we do not store any of your payment information, save for the basics like you name, email, shipping address, etc. 

What can I return?
Coffee is an agricultural food product and will eventually fade and spoil over time. That means so is Fresh Roasted Coffee. So we cannot and do not accept returns. If you are unhappy with your purchase because it was truly bad (note we did not say "tasted truly different than anything you have ever tried"), then reach out via our Keep in Touch page and we will make it right for you. 

Merchandise Return Policy (everything but Coffee):
We would like you to be satisfied with your purchase. All returns or exchanges on merchandise items must be requested and submitted to us within 15 days of the date the product was delivered. New, Unused, Packing-In-Tact items purchased online can only be returned to our HQ. We are not responsible for return shipping.
